What's Cooking?

These are recipe ideas from our volunteers using produce from the allotment often with consideration of keeping it low cost.


Two yellow ticket (i.e. reduced) classic salad 34p each, topped with (from the allotment) leaves from the 'salad bowl', beetroot, carrot, chard and then my own Quorn chunks. Delish! 

Side Salad


Made from the lettuce, grated carrot and white beetroot as well as a selection of leaves from the salad garden which added so many lovely flavours!  

Kale and Swiss Chard Frittata


Kale and Chard were from the allotment.

Shepherd's Pie


Shepherd's pie with potatoes, carrots, peas and kale from the allotment. Only had to add the shepherd. 

Veggie Sausage Surprise


Potatoes, courgette, carrot, peas, purple kale, tree spinach and onion from the allotment. Cabbage from allotment neighbour Henry. Tinned tomatoes and veg sausages. Dill and Basil from my herb garden. Fresh is best and so cheap this way. It made 3 portions! 



Vegetable Soup


Two onions, two carrots and three potatoes courtesy of the allotment. The addition of a stock cube, half a tin of mixed beans, and a handful of sweetcorn and we had a tasty vegetable soup. Some crusty bread (via Olio the save food waste app) and the perfect hearty supper. 



Stir Fry


 A lovely stir fry made out of chard, kale, beetroot and chilli. The chillies are hot!

Using reduced label veg on way home from allotment plus from allotment:
Tree spinach
Chard
Fresh mixed herbs
Parsnip 

Added Quorn chunks 

Who knew parsnip is great stir fried?

From allotment:
Purple Kale

Parsnip

Yellow Courgette

Green Beans


Added Carrot and Mushroom, Pepper

Added Quorn chunks and Engevita


Prawn Pasta  with tomatoes, chilli & garlic

  

 I cooked the tomatoes (from the allotment) in olive oil & garlic, added some chilli flakes with salt & pepper, then stirred in the spaghetti & (pre-cooked) prawns. Simple, speedy and absolutely delicious,
